I have been reading of a method where the butt is deboned and butterflied and the "Money Muscle" is placed in a standing position for cooking.

1st: Is this legal under KCBS?

2: Does anyone compete with this prep method?

3: If so, how does it work for you and why is it better than traditional whole butt method?
