Thanks for the egg. You won't see it on ebay its at home right next to my pool.

I have to admit that I'm excited. You see I live in the little town in that that is completely surrounded by Kansas City called Raytown. Small businesses come and go really fast in Raytown. We don't have many good restaurants here and I have not found any good barbecue in Raytown, other then the barbecue I cook. But I am very busy and don't have much time to cook. I often skip meals because I am so busy I forget to eat.

There has always been this little business located right on the corner a few blocks from my house. In the beginning it was the Church's Fried chicken if I remember correctly. Later it became a Pizza Hut and most recently it was a fried fish joint. There's been other businesses there but, I can't remember exactly what they were.

But for many many years I have always thought that this would be a perfect location for a carryout BBQ. I dreamed of opening up a carryout BBQ in that location at one time. Well it wasn't just one time I thought about it for at least 15 years. But I never had the time or the the money and so is this was one of those dreams that come and go by as I could never do anything about it. But every time I drove past that little building, which is many times a week, I thought "this would make a great location for a carryout BBQ spot."

Well, that dream is about to come true, but not by me. Someone else is opening up my BBQ barbecue dream. Ritter's Barbecue and catering restaurant will open Thursday of this week. I can hardly wait. Even though I have nothing to do with the restaurant I feel like I'm got an investment in this business. After all it was my idea even though nobody knew of the idea except my wife and son's and they thought I was crazy.

Just a few minutes ago I drove past a building I saw people working on it there's a lady outside washing windows. I pulled up, in my car and leaned out the car window to say hi. She said they were to open up this Thursday and I told her I really hope your barbecue is good because I'll be here Thursday. I'll report back here after I try it out and I hope I can give a really good recommendation as I want this bbq joint to be successful.

Bite through the skin Chicken Thighs

I've been watching the TV show BBQ Pitmasters. In the competition BBQ events they always mention when doing chicken thighs that when the judges take a bite they should be able to bite through the skin. In other words the skin shouldn't pull off. How do I cook thighs to obtain that bite through the skin.

I am looking to get back into smoking. I live in Southern California, so I don’t have access to full logs. I plan to use Natural Lump coal with wood chips. I will be smoking on a wood deck, so I need to be able to keep it clean. I have a $1500 budget.

I am considering:

Offset smoker such as the Tejas 1628

This is the type of grill the pros use. It has much capacity, but I am not sure I need the offset box if I cant get logs at a reasonable price. Learning curve on temperature control. Searing feature can replace my old Gas grill.

Komodo Cooker such as the Big Green Egg
Rabid following and great temperature control. Expensive for what you get. Risk of expensive breakage in earthquake or moving. Great searing feature can distroy my old Gas grill.

Weber Smoky Mountain and Weber Genesis Gas Grill
I am sure the Weber can make some great barbecue, but if I am going to give up entire days cooking I don’t want to mess around. On the other hand the budget is freed up to buy a new gas grill, which will get a lot more use than the smoking feature. Both the tejas and big green egg have searing features, but they are slightly less convenient. The Weber Smoky mountain is light weight, meaning my bad back will not be aggravated.

Let me know what you would do if you had my budget. Thanks!

With the new year coming, how will you be preparing your black-eyed peas? I know on Thursday night i'll be making some cowboy caviar. But I think I want to do something hot on Friday. Maybe chopped brisket, andouille or something like that with onions, peppers etc. Any ideas?

Hey everyone, someone I do not know put out a call in our community e-newsletter for a local source of cooked Texas brisket for a small gathering. I considered responding that I would cook one for her but honestly I don't know exactly what Texas brisket is. She said specifically she does not want Kansas City or Carolina brisket! I don't know what those things are either. I do have some Obie-Cue's Big Bull's Texas brisket rub in the cabinet, enough for a 7 pound flat at least. I wonder what she might be looking for.

Maybe no sauce at all? How does a Texan cook brisket? And don't tell me to watch the Pitmaster show:) I am completely caught up. Thanks. Mary Ann

My view on the KCBS Election

At best only 20% of the KCBS member could be considered active members. So I am not surprised at the numbers that voted. I am also not surprised at the number of incumbents that were re-elected. All the winners had very high name recognition, which was to be expected.

A couple hundred votes one way or another would have made a big difference in the KCBS election this year. Most all elections everywhere are determined by slim majorities (percentages). Most people who vote in any election are not very well informed, or not informed at all and simply vote by name recognition. That is why it is very hard to vote out incumbents. Look at our US House and Senate as an example. Both are filled with people that do a poor job but, they are well known and keep on receiving votes, from misinformed people.

So, the reason I write this is to say; that you want different people on the KCBS board the now is the time to start preparing for the next election. You have to inform and educate the voters as to the issues and what is happening because, of the actions of the elected and appointed representatives. You need to start winning the hearts and minds right now, and simply complaining is not going to do it. Constantly complaining only confuses and reduces the number of voters. .

When we are constantly complaining about individuals it's easy to do. It's very easy to find things wrong with other people because even the best of us are imperfect. However, pointing out the wrong direction an organization is going and how things could be done better is a responsibility of the members of any group.

Educating the potential voters embodies and encourages people to vote with their mind and not to vote by name recognition. This is how you overcome voter apathetic behavior. "It's a wonderful thing that everyone has a right to vote. But it does not mean that everyone is smart enough to vote."

It is also the responsibility of the candidates in any election to really give a 1,000 percent effort towards winning an election. If the candidate you supported didn't try really hard to win then don't be fooled twice and support them in the future. If a candidate tries but just didn't try hard enough, they may be worthy of your attention in the future. If the candidate you supported didn't work to get elected, then they probably didn't want the job in the first place and you shouldn't waste your efforts on them in the future. All of this is just is just how I see things.

But then what do I know.  I voted for one of the winners and two who lost.

website there was a board meeting January 6th. I don't recall seeing a public notification. The Quick Notes states it was posted Jan. 9, but, it wasn't posted until sometime today, might I digress..... In reading the Quick Notes....does this mean the 2009 TOY contenders are actually going to split 2G's? While 2 grand isn't anything to sneeze at, you'd think with the funds that were received they'd pony up a bit more.

Hi everyone. I'm cooking 7 butts Friday afternoon/evening, they should be done around midnight. I don't need to be pulling them until 9:00 am Saturday to serve at 10:00-noon. I have a large Cambro.....how would you hold them from midnight to 9:00? Let them cool just a bit to stop cooking and toss them in the Cambro? Or cool them down and reheat? (which would be a pain) I'm worried about them continuing to cook and/or bacteria if not enough time to cool......thanks!!!!!
